Butternut Squash Casserole |

Always requested, and I could eat as dessert! Not low fat I know, but sure is a great treat with a crispy topping. Ingredients:
1 cup butter (not vegetable spread!) |
3/4 cup sugar |
2 eggs |
5 ounces canned milk or 2/3 cup canned milk |
1 teaspoon vanilla |
2 cups cooked mashed butternut squash |
1/4 cup brown sugar |
1/2 cup crispy rice cereal |
1/4 cup chopped pecans |
Directions:
1. Preheat oven to 350 degrees. 2. Cream butter and sugar. 3. then combine eggs, milk, vanilla, and squash. 4. Mix and pour into 11 x 7 x 2 ungreased baking dish. 5. Bake uncovered 45 mimutes then. 6. remove and add topping then bake an additional 5 minutes. |
