Butternut squash, spinach, goat cheese and ricotta lasagna. Ingredients:
1 box lasagna noodles |
4 oz goat cheese |
1 cup ricotta |
1 cup spinach |
2 cups butternut squash |
3 tbsp butter |
1 cup skim milk |
1 cup vegetable stock |
Directions:
1. Layer no boil noodles. 2. Top them with spinach and cheese mixture. 3. From there, top with butternut squash sauce. 4. Layer the no boil noodles on top, and repeat process. |
