Light but filling country pancakes. All that's need to comple the dish is melted butter, syrup or fruit preserves. Ingredients:
1-1/4 cups all-purpose flour |
2 teaspoons baking powder |
1/2 teaspoon soda |
3/4 teaspoon salt |
2 tablespoons sugar |
1 egg, beaten |
1-1/4 cup buttermilk |
3 tablespoons peanut or safflower oil |
Directions:
1. Preheat the griddle to 350 degrees Fahrenheit. 2. In one bowl, sift the flour, baking powder, soda, salt and sugar. Then blend these ingredients thoroughly. 3. In another bowl, beat the egg, then beat-in the buttermilk and oil. 4. Add the DRY INGREDIENTS to the WET INGREDIENTS all at once, stirring until just mixed. The batter should be slightly lumpy. 5. If too thick, add more buttermilk to the batter. 6. Pour or dip the pancake batter directly onto the oiled, hot griddle and cook until bubbles form on the surface of the cakes. 7. Turn the cakes just before all the bubbles pop to cook the other side.. 8. When the bottoms are browned, remove the cakes to a warmed plate where they may be buttered and stacked. |
