Buttermilk makes this oven fried chicken tender and juicy. From Core Performance. low-fat buttermilk, large egg whites, all- purpose flour, cornmeal, salt & pepper, cayenne pepper, chicken breasts, chicken thighs, chicken drumsticks, canola oil, cooking spray cvt Ingredients:
1 cup low-fat buttermilk |
2 large egg whites, beaten |
1 cup all-purpose flour |
1/2 cup cornmeal |
1/2 tsp salt |
3/4 tsp black pepper |
1/2 tsp cayenne pepper |
2 chicken breasts, skinned |
2 chicken thighs, skinned |
2 chicken drumsticks, skinned |
2 tbsp canola oil |
1 cooking spray |
Directions:
1. Preheat oven to 425 degrees. Cover large baking sheet with parchment paper. Combine buttermilk and egg whites in a bowl and stir to combine. Combine flour, cornmeal, 1/2 tsp salt, 3/4 tsp pepper and cayenne pepper in another bowl. Sprinkle chicken with a little salt. Dip chicken into buttermilk mixture, then dredge in flour mixture. 2. Heat oil in a large nonstick skillet over medium-high heat. Add chicken to pan. Cook four minutes on each side or until lightly browned. Place chicken on prepared baking sheet. Spray chicken with cooking spray. Bake for 30 minutes or until chicken is done. |
