These pancakes use rolled oats soaked overnight in buttermilk. They have wonderful flavor and texture. Time to make does not include overnight soaking. Ingredients:
2 cups rolled oats |
2 cups buttermilk |
2 eggs, lightly beaten |
1/4 cup butter, melted |
1/2 cup flour |
2 tablespoons sugar |
1 teaspoon baking powder |
1 teaspoon baking soda |
1/2 teaspoon cinnamon |
1/4 teaspoon salt |
Directions:
1. Soak oats in buttermilk overnight. Add eggs and butter. Mix dry ingredients and add to liquid mixture. |
