Ingredients:
1 cup quick-cooking oats |
1 cup buttermilk |
1 egg, beaten |
1/2 cup packed brown sugar |
1/4 cup vegetable oil |
1 cup all-purpose flour |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
Directions:
1. In a bowl, soak oats in buttermilk for 15 minutes. 2. Stir in egg, sugar and oil. 3. Combine flour, baking powder, baking soda and salt; stir into oat mixture just until moistened. 4. Fill greased or paper-lined muffin cups three-fourths full. 5. Bake at 400 degrees for 16-18 minutes or until muffins test done. 6. Cool in pan 5 minutes; remove to wire rack. 7. Yield: about 8 muffins. |
