Moist bread. Good as written but even better with the addition of raisins, nuts, and spices. Ingredients:
1 cup rolled oats |
1 cup buttermilk |
1/2 cup vegetable oil |
1 egg |
1/2 cup packed brown sugar |
1 cup all-purpose flour |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
Directions:
1. Mix oats with buttermilk. Let stand for 1/2 hour. 2. Stir oil, egg, and brown sugar into oat mixture. Stir together flour, baking powder, soda, and salt: mix into oat mixture. Pour batter into a greased and floured 8 1/2 x 4 1/2 inch loaf pan. 3. Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until done. |
