Buttermilk 'n' Honey Pancakes |

Laura Weaver of B. Weaver Apiaries adds sweetness, flavor, and moisture to these pancakes with honey. Ingredients:
1 cup all-purpose flour |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
1 large egg, lightly beaten |
1 cup buttermilk |
2 tablespoons dark honey |
pecan-honey butter (optional) |
Directions:
1. Stir together first 4 ingredients in a medium bowl. Add egg, buttermilk, and honey, stirring until well blended. 2. Pour 1/4 cup batter onto a hot, lightly greased griddle or skillet. Cook 1 to 2 minutes or until top is covered with bubbles and edges look cooked. Turn and cook 1 more minute. Repeat with remaining batter. Top pancakes with Pecan-Honey Butter, if desired. |
