Buttermilk Mashed Potatoes |

Add flavor to your potatoes. Ingredients:
2 lbs potatoes, peeled, cut into 1-inch cubes |
2 cups water |
1 cup chicken broth |
6 garlic cloves, peeled |
1/2 cup 1% fat buttermilk |
1/4 cup thinly sliced green onion |
1 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. In a large saucepan, combine the potatoes, water, broth and garlic. 2. Cover potatoes and bring to a boil. 3. Reduce the heat and simmer for 12-15 minutes or until potatoes are tender. 4. In a smaller saucepan, heat buttermilk until warm. 5. Drain potatoes and garlic; mash with buttermilk. 6. Stir in onions, salt and pepper. |
