Buttermilk Crumb Cake

A sweet, caramel-y cake with crumb topping - delicious!
Ingredients:
3/4 cup butter
2 cups brown sugar, packed
2 cups all-purpose flour
1 egg, beaten
1 cup buttermilk
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
Directions:
1. In a mixing bowl, cream the butter and brown sugar.
2. Add flour; mix until blended and crumbly. Set aside 1 cup for topping.
3. To the remaining mixture, add egg, buttermilk, vanilla, baking soda and salt; stir just until blended.
4. Pour into a greased 13in.x 9in.x 2in. baking pan.
5. Sprinkle with the reserved crumb mixture.
6. Bake at 375ยบ for 30-35 minutes or until a toothpick inserted near the center comes out clean.
7. Garnish with whipped cream if desired.
