This makes a very moist cornbread Ingredients:
2 eggs |
1 1/2 cups buttermilk |
1/2 cup vegetable oil |
1/2 cup applesauce |
1/3 cup honey |
2 teaspoons salt |
1 cup cornmeal |
2 1/2 cups flour (may use a combination of white and wheat) |
4 teaspoons baking powder |
1 teaspoon baking soda |
Directions:
1. Combine dry ingredients and set aside. 2. Mix eggs, buttermilk oil, applesauce, and honey. 3. Gently fold in dry ingredients, mix just until blended. 4. Batter will be lumpy. 5. Pour into greased 9x13 pan. 6. Bake at 400 degrees for about 20 minutes or until lightly browned. 7. Also makes 12 muffins, if desired. |
