I like this recipe because it bakes in a small cast iron skillet. Perfect for two. Ingredients:
1/2 cup flour |
1/2 cup cornmeal |
1/4 cup sugar |
1 pinch salt |
1 tablespoon baking powder, heaping |
6 tablespoons butter |
1 egg |
3/4 cup buttermilk |
Directions:
1. Melt butter in cast iron skillet. 2. Combine all dry ingredients. 3. Beat in egg and buttermilk. 4. Fold in melted butter from skillet. 5. Pour into skillet and bake at 425 degrees for 15 minutes. |
