Simply delicious, nutritious accompaniment to any meal or a quick grab and go breakfast. Ingredients:
2 cups buttermilk |
13/4 cup unprocessed wheat bran |
non-stick vegetable spray |
1 egg |
1/3 cup canola oil |
1/4 cup molasses |
1 teaspoon cinnamon |
1 teaspoon baking soda |
1 teaspoon baking powder |
1/2 teaspoon salt |
11/2 cup brown sugar |
11/2 cup flour (white wheat or whole wheat) |
Directions:
1. This can either be done in a food processor or by hand. 2. Preheat oven to 375 degrees Fahrenheit. 3. In a bowl mix 1 cup buttermilk into the bran. Set aside. 4. Spray muffin tins liberally with non-stick vegetable spray. Set aside. 5. Mix wet ingredients in a bowl (egg, oil, molasses). Stir until combined. 6. Add dry ingredients: cinnamon, baking soda, baking powder, salt, brown sugar, flour and the bran mixture that was set aside. Mix well. Mixture will be dry. 7. Add remaining cup of buttermilk. Stir. 8. Fill muffin tins. 9. Bake 15 to 20 minutes in a 375 degree oven. |
