Buttermilk Blueberry Muffins |

Ingredients:
2 cups all-purpose flour |
1/2 cup brown sugar, packed |
1 tablespoon baking powder |
1 teaspoon baking soda |
1/2 teaspoon lemon peel, grated |
1/2 teaspoon ground nutmeg |
1 cup blueberries |
1 cup vanilla yogurt, nonfat |
1 cup buttermilk |
Directions:
1. Combine the first 6 ingredients in a large bowl. 2. Gently fold in blueberries. 3. In a separate bowl, combine yogurt and buttermilk. 4. Stir wet ingredients into dry ingredients until just moistened. 5. Fill greased or paper-lined muffin cups 2/3 full. 6. Bake at 400 degrees for 18-20 minutes or until a toothpick inserted in center comes out clean. 7. Cool for 5 minutes before removing from pan to wire rack. |
