Buttermilk Bisque With Cucumbers And Onions |

This is on the order of a gazpacho because it does not require any cooking. Ingredients:
3 cups chopped cucumber |
1/2 cup chopped vidalia onions |
2 tablespoons chopped fresh dill, plus more for garnish |
1 quart buttermilk |
1 cup plain yogurt |
2 teaspoons sugar |
salt and pepper to taste |
Directions:
1. Place ingredients in a food processor fitted with a metal blade or blender and puree until almost smooth. 2. Chill at least one hour before serving. 3. Garnish with additional dill. |
