Be aware that this recipe makes VERY dense, moist muffins or cake so if you're looking for light and fluffy, this recipe is definitely not for you... :( The recipe halved makes 9 muffins and a full recipe makes a cake in a 9X13 pan. Ingredients:
2 1/2 c. flour
1 2/3 c. sugar
1 1/4 tsp. baking powder
1 1/4 tsp. baking soda
1 tsp. salt
2/3 c. oil
2/3 c. buttermilk
2 eggs
1 1/2 c. bananas, mashed
1 tsp. vanilla
Directions:
1. Mix flour, sugar, soda, baking powder and salt.
2. Combine buttermilk, oil and eggs. Add to dry ingredients and beat for 2 minutes.
3. Add mashed bananas mixed with vanilla.
4. Pour into greased muffin pans or 9X13 cake pan. Bake at 350 degrees for about 25 minutes. Use toothpick test.
