Be aware that this recipe makes VERY dense, moist muffins or cake so if you're looking for light and fluffy, this recipe is definitely not for you... :( The recipe halved makes 9 muffins and a full recipe makes a cake in a 9X13 pan. Read more . Frost with your choice of icing, sprinkle with powdered sugar, or leave plain and eat as a breakfast treat. Ingredients:
2 1/2 c. flour |
1 2/3 c. sugar |
1 1/4 tsp. baking powder |
1 1/4 tsp. baking soda |
1 tsp. salt |
2/3 c. oil |
2/3 c. buttermilk |
2 eggs |
1 1/2 c. bananas, mashed |
1 tsp. vanilla |
Directions:
1. Mix flour, sugar, soda, baking powder and salt. 2. Combine buttermilk, oil and eggs. Add to dry ingredients and beat for 2 minutes. 3. Add mashed bananas mixed with vanilla. 4. Pour into greased muffin pans or 9X13 cake pan. Bake at 350 degrees for about 25 minutes. Use toothpick test. |
