Buttermilk and Shrimp Soup |

A great soup for a dinner party. Make about 3 to 4 hours in advance and then it is ready to serve when guests arrive. Great for those hot summer days. Ingredients:
1 quart buttermilk |
1 tablespoon dijon mustard |
1 teaspoon salt |
1 teaspoon granulated sugar |
8 ounces cooked shrimp, chopped (small salad shrimp works well) |
1 cucumber, peeled,seeded and chopped |
2 tablespoons green onions, chopped |
Directions:
1. Combine the buttermilk, mustard, salt and sugar. 2. Add shrimp, cucumber and green onion. 3. Stir until blended. 4. Cover and refrigerate for 3 to 4 hours. 5. Serve in chilled soup bowls. 6. The cooking time reflects the time to chill the soup. |
