Buttered Pecan Pie. Filling is made of whipping cream, toasted pecan halves, brown sugar, corn syrup eggs and butter! Yes, this is very good! Ingredients:
1/2 stick unsalted butter |
3/4 cup heavy cream |
1 cup firmly packed light brown sugar |
1/4 teaspoon salt |
1/2 cup light corn syrup |
1 teaspoon vanilla extract |
3 eggs |
1-1/2 cups toasted* pecan halves |
1 unbaked pie crust |
*toast pecans in 375 degree oven for 5-10 minutes, stirring 3 times while baking |
Directions:
1. In medium saucepan, heat butter over low heat until it turns golden-amber (do not burn) 2. Immediately pour cream into butter to stop cooking 3. Pour into mixing bowl 4. Blend in brown sugar, salt, corn syrup and vanilla 5. Beat in eggs *by hand* until well blended (I use whisk) 6. Stir in pecans 7. Pour into pastry lined 9 inch pie plate (crimp edges of pastry as high as possible) 8. Cover edges with strips of aluminum foil 9. Bake 30 minutes at 375 degrees 10. Remove foil strips and continue baking until filling is set and pastry is golden (about 15 minutes 11. Cool at least 2 hours before slicing 12. Delicious, and a little different from a regular pecan pie |
