With fall fast approaching I plan to give this a try. It comes from the Sep/Oct 2005 issue of Quick Cooking, offered by Edna Hoffman. Ingredients:
6 cups apple cider or 6 cups apple juice |
1/2 medium unpeeled navel orange, sliced |
8 whole allspice |
8 whole cloves |
2 cinnamon sticks (3 inches) |
1 orange rind, strip (3 inches) |
1/2 cup brown sugar |
1/4 cup butter, softened |
1/2 teaspoon ground cinnamon |
Directions:
1. In a large saucepan, combine cider and orange slices. 2. Place the allspice, cloves, cinnamon sticks, and orange peel on a double thickness of cheesecloth. 3. Bring up corners of cloth and tie with string to form a bag. 4. Add to pan. 5. Bring to boil over medium heat. 6. Reduce heat and simmer uncovered for 15-20 minutes. 7. In small bowl, combine the butter, sugar and cinnamon. 8. Discard the spice bag. 9. Ladle cider into mugs. 10. Dot with butter mixture. 11. Serve while still hot or warm. |
