Buttered Maple Syrup Kumara |

I use orange coloured sweet potato for this recipe. Ingredients:
4 medium kumara, halved lengthwise, about 1 . 5 kgs |
2 tablespoons olive oil |
125 ml pure maple syrup |
40 g butter, melted |
Directions:
1. Dice kumara into 2 cm slices. 2. Combine kumara with oil in baking dish. 3. Bake, uncovered in moderate oven for 30 minutes. 4. Increase oven temp to hot. 5. Drizzle kumara with combined syrup and butter. 6. Bake uncovered for 20 minutes, turning vegetables over once. |
