Buttercream or Chocolate Frosting Too |

Trial and error has produced this easy, never fail frosting for cupcakes or a cake. This makes enough for a cake or about 18 cupcakes. Ingredients:
1/2 cup shortening |
1/2 cup butter, at room temp, no substitutes (1 stick) |
1 teaspoon vanilla extract |
3 1/2 cups confectioners' sugar |
3 ounces evaporated skim milk |
Directions:
1. Mix softened butter with shortening with mixer, about 10 minutes on high speed. Add sugar. If chocolate frosting is desired, add up to 1/4 cup cocoa, depending on desired flavor. Continue mixing until completely blended. 2. Add vanilla and evaporated milk (can use whipping cream) and blend on low several minutes until incorporated into the sugar-butter mixture. Beat at high speed until fluffy, at least several minutes. |
