Butterbean and Tomato Salad

A simple gluten-free salad. Easily multiplied for a larger batch. Lime, lemon or orange segments can be added as an extra if desired
Ingredients:
400 g butter beans, drained and rinsed
8 tomatoes, skinned and roughly chopped
1 limes or 1/2 lemon, juice of
salt and black pepper
2 tablespoons olive oil
Directions:
1. Lightly toss all ingredients together and season with salt and pepper to taste.
2. Refrigerate until needed.
3. Fresh lime, lemon or orange segments can be added as an extra if desired.
