Butterbean And Chorizo Cassoulet

Tasty bean stew for lunch if you want to serve for dinner serve with some toasted ciabatta
Ingredients:
butterbeans x 2 tins - drained & rinsed
tomatoes x 2 tins
garlic cloves - finely chopped
fennel seeds - 1 teaspoon
dried chilli flakes 1/2 teasoon
chorizo sausage x 2 (enough for 4 servings) sliced
olive oil for cooking
salt & pepper
Directions:
1. Heat a little oil in saucepan on medium heat add garlic fennel seeds & chilli flakes fry until garlic has coloured a little & seeds are toasted add chorizo fry for another minute or so.
2. Add tinned tomatoes stir around turn heat down to simmer leave sauce to thicken for about 25 mins.
3. Add butterbeans to sauce turn heat up add salt and pepper & serve
