Butter Rum Glazed Applesauce Cake |

Delicious! Ingredients:
1/3 cup butter |
3/4 cup sugar |
1 cup applesauce |
1 apple, cored, peeled and chopped |
1 teaspoon vanilla |
1 1/4 cups flour |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1/2 teaspoon salt |
2 tablespoons butter |
1 cup powdered sugar |
1/2 teaspoon rum extract |
3 -4 teaspoons half-and-half |
Directions:
1. Melt butter in a saucepan over medium heat. Cook and stir for 2 to 2 1/2 minutes until butter begins to brown. Immediately remove from heat and stir in sugar, applesauce, apple and vanilla. Set aside. 2. Combine remaining ingredients in a large bowl and stir in applesauce mixture. Pour into a greased 8x8 baking dish. 3. Bake at 350ºfor 25 minutes or until a toothpick inserted in center comes out clean. 4. Pour warm rum glaze over hot cake. Let cake cool for 30 minutes and serve warm. 5. Glaze: Melt butter in a saucepan over medium heat. Cook and stir for 2 to 2 1/2 minutes until butter begins to brown. Immediately remove from heat and stir in remaining ingredients until spreadable and smooth. |
