Butter Rum Cinnamon Cookies |

this is a recipe from the Gooseberry cookbook series... I haven't made these but they looked and sounded good...so I thought I would share..the prep time does not include the chilling time. Ingredients:
1 cup unsalted butter softened |
1 cup sugar |
2 1/4 cup almonds, finely ground |
1 egg |
2 1/2 teasp. cinnamon |
zest of one orange |
1/4 cup dark rum or orange juice |
3 1/3 cup flour |
1/2 teasp. baking powder |
1 egg lightly beaten |
Directions:
1. cream the butter and sugar 2. add the almond and 1 egg.. beat until fluffy 3. add cinnamon, orange zest, and rum. beat until smooth 4. in separate bowl .. stir together flour and baking powder 5. add to the butter mixture and combine lightly 6. wrap dough in plastic wrap and refrigerate about a hour or until firm 7. roll out the dough on a lightly floured surface to 1/4-inch thickness 8. cut out your favorite shapes... 9. place cookies 1/2-inch apart on a greased baking sheet 10. brush cookies with beaten egg 11. bake at 350' F for about 10 minutes or until light golden in color 12. cool on a wire rack 13. makes about 72 cookies depending on the size and shape you cut 14. store them in an airtight container |
