Butter Pecan Ice Cream Cake |

This is a recipe I came up with to use up some pecan sandie cookies. Ingredients:
15 or so of pecan sandie cookies |
enough melted butter to hold crumbs together aprox 4 or 5 tablespoons |
1 quart butter pecan ice cream,softened |
1 jar caramel ice cream topping |
Directions:
1. Crush cookies in ziplock bag till you get fine crumbs.Place in bowl. 2. Add in enough butter till holds together and can make a crust (like a graham cracker pie crust).Set aside 1/2 a cup. 3. In 9 square cake pan pat in crumbs to form a crust. 4. Drizzle ice cream topping all over bottom. 5. Slice ice cream in slices n fit into pan, smooth top. 6. Drizzle some more ice cream topping over top n sprinkle with reserved crumbs.Freeze several hours, covered. |
