This cookie recipe goes back years and has remained a favorite, I sometimes add in tiny chocolate chips to the batter :) Ingredients:
1 cup butter, softened (no substitutions) |
3/4 cup sugar |
3/4 cup firmly-packed brown sugar |
2 eggs |
1 teaspoon vanilla or 1 teaspoon maple extract |
2 1/4 cups flour |
1 teaspoon baking soda |
1/8 teaspoon salt |
1 cup chopped pecans (can use a little more) |
Directions:
1. Set oven to 375 degrees. 2. In a bowl, cream butter with sugars, until light and fluffy. 3. Beat in eggs and vanilla. 4. Combine dry ingredients; add to creamed mixture; mix well. 5. Add in chopped pecans. 6. Drop dough by teaspoons onto an ungreased cookie sheet. 7. Bake for 10 minutes, or until lightly browned (don't overbake). |
