Makes a great birthday cake. Moist and buttery. Ingredients:
2 1/4 cup cake flour |
1 1/2 cup sugar |
1/2 cup butter |
2 teaspoons baking powder |
1 teaspoon baking soda |
1 teaspoon salt |
1 cup plus 2 tablespoon buttermilk |
1 teaspoon vanilla |
3 eggs |
pecan frosting |
1/3 cup butter-no substitutes |
3/4 cup chopped pecans |
1 teaspoon vanilla |
1/4 cup plus 1 tablespoon milk |
4 cups sifted confectioners' sugar |
Directions:
1. Preheat oven to 350 degrees. 2. Grease and flour two 9 round cake pans. 3. Combine first nine ingredients in a large mixing bowl and beat for 30 seconds with an electric mixer on low speed and then for 3 minutes on high speed. Scrape down bowl constantly. 4. Pour batter into prepared pans. 5. Bake 30-35 minutes or until inserted toothpick comes out clean. 6. Cool layers in pans for 10 minutes then turn out onto wire racks. 7. Cool completely. 8. Frosting: 9. Heat butter in medium saucepan over low heat until melted. 10. Stir in pecans. Cook until butter is light brown(about 2 minutes). 11. Remove from heat. Cool. 12. Add vanilla and milk. 13. Slowly add sugar and beat until frosting is spreadable. 14. Add additional milk if necessary. 15. Frost cake. |
