These pale golden butter-mint pats/cookies are similar to a shortbread type cookie, and are so melt-in-your-mouth delicious! A favorite from my father. Ingredients:
1 cup butter, softened (do not use margarine) |
1 cup butter mints, crushed (yellow mints richardson butter mints (made with real butter, comes in a 5.5 ounce box) |
2 cups flour |
1 tablespoon granulated sugar |
Directions:
1. Cream butter in large mixer bowl until light; add crushed mints. 2. Add flour; blend well at low speed with mixer, or by hand. 3. Chill dough for 1/2 hour. 4. Roll out or pat dough into a 9-inch square on waxed paper. 5. Sprinkle with sugar. 6. Cut into 1 1/2-inch squares. 7. Using tiny cookie cutter, press a design on each square. 8. Place on ungreased cookie sheets. 9. Bake at 350 degrees for 18-20 minutes, or until the cookies are set and just starting to turn pale golden (not browned). Do not overbake. 10. (NOTE: Cook time includes chill time of 1/2 hour.). 11. (NOTE: To crush mints place in heavy plastic bag and crush with a rolling pin- or, use your processor.). |
