A real sweet treat I found in my recipe stash. Definitely for the sweetaholic . Ingredients:
3/4 cup flour |
1 teaspoon baking powder |
1/4 teaspoon salt |
1/3 cup butter |
1 cup brown sugar |
1 egg |
1 teaspoon vanilla |
25 marshmallows, regular sized, cut in half |
1 1/2 cups brown sugar |
1/4 cup butter |
1/3 cup cream |
1/8 teaspoon salt (pinch) |
1 teaspoon vanilla extract |
Directions:
1. Preheat oven to 350*. 2. Sift dry ingredients together - flour, baking powder, and salt. 3. Cream butter and sugar, then mix in egg and vanilla extract. 4. Stir in the dry ingredients, mixing well. 5. Spread in a 8 greased pan. Bake 350* for 20-25 minutes. Remove from oven. 6. Cover with marshmallows, cut side down, pressing in slightly. Return to oven to melt slightly, 2-4 minutes. 7. TOPPING: Combine all ingredients except the vanilla, and bring to a boil. 8. Cook until soft ball stage, 238*F (or when a small amount of mixture dropped from a spoon into cold water forms a soft ball ). 9. Remove from heat and cool 5 minutes. DO NOT STIR! 10. After the 5 minutes, beat in the vanilla until mixture is of spreading consistency. Spread over marshmallow layer & cut into squares. |
