Delicious pan fried zucchini fried in butter not oil! Easy to make too! You can even add a little bit of garlic powder and chili powder to spice things up a bit. Ingredients:
2 eggs, beaten |
2 cups all-purpose flour |
2 large zucchini, cut into 1/2 inch slices |
3/4 cup margarine |
salt and pepper to taste |
Directions:
1. Place the beaten eggs in a bowl. Place the flour on a dish. Dip the zucchini in the eggs, then dredge in the flour to coat. 2. Melt the margarine in a large skillet over medium heat. Fry the coated zucchini slices in the margarine until lightly browned. Season with salt and pepper. |
