Butter Bean And Sweetcorn Sauce |

Great side dish to serve with chicken or why not add extra water and use as a sauce. Ingredients:
c butterbeans, shelled if you prefer. i used tinned beans for quickness. |
1/2c sweetcorn |
1/2c water |
1/2-1 clove garlic (depends on preference) |
salt & pepper |
50g butter |
Directions:
1. place butter beans and sweetcorn in salted water and heat until soft. 2. In seperate pan, add butter and crushed garlic. Heat until butter melted then add flour to make a roux. 3. Add the full butterbeans/ sweetcorn and water to the roux and mix through. stir and heat to thicken. more water can be added if you require a thinner consistency. 4. Season and serve. Tastes great with chicken. |
