A sweet buttery taste treat as a side dish with ham or turkey from Imperial Sugar. So easy to make and so rich in beta-carotene and other nutrients. Enjoy Ingredients:
butternut squash pudding |
1 medium butternut squash or acorn squash |
1/2 c butter or margarine |
1c imperial sugar/dixie crystals dark brown sugar or light brown sugar |
2 eggs, beaten |
1/2 c milk |
1/4 tsp salt |
1/8 tsp maple flavoring |
Directions:
1. Peel, seed and slice the squash. Steam in small amount of water until tender. Drain and mash with fork until no lumps are left. Using 1-1/2 cups of squash, add butter and let melt. Add all other ingredients and mix well. Pour into a greased baking dish and bake 30 minutes at 350 degrees or just until pudding is congealed and bubbly. Serve warm. |
