I made these for my daughters birthday a few years ago and they were a big hit. They take a bit more effort than the recipes that call for vanilla wafers and chocolate candy, but they are worth it. Ingredients:
1 (22 1/3 ounce) package sugar cookie mix |
2 eggs |
1/3 cup vegetable oil |
1 teaspoon water |
1 (10 ounce) package peanut butter chips or 1 (10 ounce) package butterscotch chips |
3/4 cup flaked coconut |
5 -6 drops green food coloring |
1/2 cup butter or 1/2 cup margarine, softened |
2 2/3 cups powdered sugar |
1/2 cup baking cocoa |
1/4 cup milk |
1 teaspoon vanilla extract |
Directions:
1. Combine cookie mix, eggs, oil, and water; mix well. 2. Stir in peanut butter or butterscotch chips. 3. Shape into 1-1/4 inch balls; place 2 inches apart on an ungreased baking sheet. 4. Bake at 375 degrees Fahrenheit for 9 to 11 minutes or until lightly browned. 5. Remove to wire racks to cool. 6. For topping, mix together coconut and food coloring in a plastic ziplock -type baggie; knead through baggie until until all coconut is green. 7. For filling, mix together all filling ingredients in a mixing bowl; beat until smooth. 8. Frost the bottoms of 1/2 of the cookies; sprinkle with colored coconut. 9. Top with remaining cookies and gently squeeze together. |
