These are such great muffins, bursting with lemon flavor. Great for breakfast, brunch, or anytime for that matter. Enjoy Ingredients:
1-3/4 cups all-purpose flour |
3/4 cup granulated sugar |
1 teaspoon baking powder |
3/4 teaspoon baking soda |
1/4 teaspoon salt |
1 cup lemon yogurt |
1 egg |
1/3 cup butter melted |
2 tablespoons grated lemon peel |
1 tablespoon lemon juice |
1/2 cup flaked coconut |

1/3 cup lemon juice |
1/4 cup granulated sugar |
1/4 cup flaked coconut toasted |
Directions:
1. In large bowl combine flour, sugar, baking powder, baking soda and salt. 2. In another bowl beat yogurt, egg, butter, lemon peel and lemon juice until smooth. 3. Stir into dry ingredients just until moistened then fold in coconut. 4. Fill greased muffin cups 2/3 full. 5. Bake at 400 for 20 minutes then cool 5 minutes before removing from pan to a wire rack. 6. In a saucepan combine lemon juice and sugar then cook and stir until sugar is dissolved. 7. Stir in coconut then using a toothpick poke eight holes in each muffin. 8. Spoon coconut mixture over muffins and serve warm. |
