An easy Mexican inspired one pot rice dish . Ingredients:
1 cup uncooked rice |
2 cups water |
1lb lean ground beef |
1 small onion, chopped |
1 t chili powder |
1 tsp each onion powder, garlic powder, cumin, cayenne pepper, salt and ground black pepper(or, you can use a taco seasoning packet) |
2 10 oz cans rotel tomatoes(or one rotel and one regular diced, for a milder flavor) |
1 can black or refried beans |
1 cup sliced black or green olives |
1 cup whole kernel corn(fresh or frozen) |
8oz sour cream |
2 cups shredded mexican or cheddar cheese |
Directions:
1. Brown beef in large skillet. Add remaining ingredients other than sour cream and cheese. Stir until combined and bring to a boil. Reduce heat and cover. Cook for 20-25 minutes until rice is to desired doneness, stirring occasionally. Add sour cream and cheese when serving. Serve with tortillas or fried tortilla strips on top. |
