A great recipe I got from Mom's Online. Good for your picky child!!! Serve with quesadillas and a veggie for a complete meal. Ingredients:
1 lb ground beef |
1 package taco seasoning |
1 can refried beans |
1 (16 ounce) jar salsa |
1 cup cheddar cheese or 1 cup monterey jack cheese |
sour cream |
1 can olive (sliced) |
Directions:
1. In a large bowl, mix together ground beef and taco seasoning. 2. Form mixture into a loaf shape and place in a loaf pan for baking. 3. Cook for 30-45 minutes at 375 degrees (F). 4. Remove loaf from pan. 5. Drain any drippings or grease from the bottom of the pan. 6. In the bottom of the pan spread refried beans. 7. Put meatloaf back on top of beans. 8. Pour salsa on top of meatloaf. 9. Sprinkle top with Cheese. 10. Return to oven for 10 minutes, until cheese is melted. 11. Slice to serve. 12. Top each serving with a dollop of sour cream and a sprinkling of sliced olives. |
