Ingredients:
1/2 cup scallion, chopped |
1 garlic clove, chopped |
1 cup tomato, chopped |
2 tablespoons cilantro |
3 cups spinach, chopped |
3 cups collard greens, chopped |
1 serrano pepper, seeded and chopped |
6 (10 inch) whole wheat tortillas |
Directions:
1. Combine all ingredients but tortillas in blender. 2. Blend into chunky paste. 3. Spread evenly amongst tortillas. 4. Roll tortillas, seal in individual plastic containers and freeze. |
