Biscuits/cookies are great for lunches...we like to take out of oven a little earlier for a soft cookie! Ingredients:
250 grams butter |
3/4 cup sugar |
1 egg |
1 tsp almond essence |
2 cups flour |
1 tsp baking powder |
35 grams whole, blanched almonds |
Directions:
1. Heat the butter in a saucepan and heat over a moderate heat until the butter turns a lovely nut brown colour. 2. Remove the saucepan from the heat immediately and stand on a damp cloth to avoid further cooking. Scrape any sediment from the base of the saucepan and mix into the butter. 3. When cool beat the sugar, egg and almond essence into the melted butter. 4. Sift the flour and baking powder together and stir into the mixture. 5. Use your fingers to roll heaped teaspoonfuls of the mixture into balls and place them on a greased baking tray. Flatten with your fingers and place an almond in the centre of each biscuit. 6. Bake at 160ÂșC for 15-20 minutes until lightly golden. Cool the biscuits on a cake rack and store them in an airtight container. |
