Burmese Chin Hin Sour Soup |

Ingredients:
2 teaspoons oil |
1 onion, finely sliced |
2 garlic cloves, smashed |
1/2 teaspoon turmeric |
3 green tomatoes, chopped |
2 ounces spinach, torn |
4 cups fish stock |
salt |
cooked rice |
Directions:
1. Heat oil in saucepan and quickly saute onion, garlic and turmeric. 2. Add tomatoes and spinach. Stir well and add stock. 3. Bring to a boil, reduce heat to simmer and cook until vegetables are tender. Salt to taste. 4. Add rice to bottom of soup bowl and ladle soup over rice. Serve. |
