Here's an antipasta recipe to rival all of them! Great on crackers as an appetizer at your next get-together!! This is a large-quantity recipe that you make in advance and process - to store and use whenever you like. Ingredients:
2 lbs. chopped cauliflower |
2 lbs. chopped, small cucumbers |
2 lbs. chopped green beans |
2 lbs. chopped green peppers |
2 lbs. chopped red peppers |
2 lbs. chopped mushrooms |
2 tins black olives (19 oz.) sliced or chopped |
3 lbs. small pickling onions |
2 jars stuffed olives |
fresh carrots (sliced or grated) |
4 cans solid tuna (in vegetable broth or unsalted) |
68 oz. ketchup |
1 1/2 c. vinegar |
1 1/2 c. oil |
Directions:
1. Mix the tuna, olives, and mushrooms and set aside. 2. Boil the beans for a few minutes. 3. Put the ketchup, vinegar, and oil in a very large pot. 4. Add all the vegetables (except the tuna mix) and boil for 10 minutes. 5. Mix everything together. 6. Pour into glass pint canning jars (22-28 pints) and process in a hot water sealer for 15 minutes. |
