I found this recipe in a Mexican cookbook & it has become a favorite treat. These tasty little doughnut type sweets are delicious served with the syrup or alone Ingredients:
bunuelos |
2 cups all- purpose flour |
1 tsp baking powder |
1/2 tsp salt |
1 tblsp granulated sugar |
1 large egg - beaten |
1/2 cup milk |
2 tblsp butter - melted |
oil for frying |
granulated sugar for dusting |
syrup |
1 1/3 cups light brown sugar |
3 cups water |
1 inch piece cinnamon stick |
1 clove |
Directions:
1. Make syrup first. 2. Syrup:- 3. Combine all ingredients in a saucepan 4. Heat, stirring, until the sugar has dissolved 5. Simmer until the mixture has reduced to a light syrup 6. Remove & discard the spices 7. Keep warm while you make the bunuelos or make ahead & warm when bunuelos are ready 8. Bunuelos:- 9. Sift the flour, salt & baking powder into a bowl 10. Stir in the sugar 11. In a mixing bowl, whisk the eggs & the milk together until well blended 12. Gradually stir in the dry ingredients 13. Beat in the melted butter to make a soft dough 14. Turn the dough out onto a lightly floured board & knead it until it is smooth & elastic 15. Divide the dough into 18 equal pieces 16. Shape into balls & with your hands, flatten into discs about 3/4 inches thick 17. Use the floured handle of a wooden spoon to poke a hole in the center of each bunuelo 18. Pour oil into a deep frying pan or use a deep fryer & heat to 375 degrees 19. Fry the bunuelos in batches, taking care not to overcrowd the pan, until they are puffy & golden brown on both sides 20. Lift out with a slotted spoon & drain on paper towels 21. Dust the warm bunuelos with sugar & serve with the syrup |
