Ingredients:
1 cup uncooked bulgur |
1 cup boiling water |
3/4 teaspoon salt, divided |
1 1/2 cups diced zucchini (about 1) |
3/4 cup frozen english peas, thawed |
1/4 cup minced fresh cilantro |
3 tablespoons orange juice |
3 tablespoons lime juice |
1 tablespoon extra-virgin olive oil |
1/8 teaspoon pepper |
Directions:
1. Combine bulgur, water, and 1/2 teaspoon salt in large bowl; let stand 20 minutes or until water is absorbed. 2. Add zucchini, 1/4 teaspoon salt, peas, and remaining ingredients to bulgur; stir well. |
