Ingredients:
1 cup uncooked bulgur
1 cup boiling water
3/4 teaspoon salt, divided
1 1/2 cups diced zucchini (about 1)
3/4 cup frozen english peas, thawed
1/4 cup minced fresh cilantro
3 tablespoons orange juice
3 tablespoons lime juice
1 tablespoon extra-virgin olive oil
1/8 teaspoon pepper
Directions:
1. Combine bulgur, water, and 1/2 teaspoon salt in large bowl; let stand 20 minutes or until water is absorbed.
2. Add zucchini, 1/4 teaspoon salt, peas, and remaining ingredients to bulgur; stir well.
