The Complete Idiot’s Guide to Glycemic Index Snacks
Ingredients:
1/2 cup bulgur, soaked
1 medium apple, cored and cut in 1/2 inch chunks
1 teaspoon lemon juice
3 tablespoons olive oil
1 cup celery, thinly sliced
1 cup seedless grapes, halved
1/2 cup greek yogurt
2 teaspoons fresh basil, chopped
1/8 teaspoon black pepper
2 tablespoons walnuts, toasted and chopped
Directions:
1. In a large bowl, combine bulgur, apple, lemon juice and olive oil.
2. Add celery, grapes, yogurt, and basil and mix. Season with pepper.
3. Refrigerate one hour to allow flavors to blend.
4. Sprinkle each serving with 1/2 tablespoon walnuts and serve.
