Bulgur Salad with Feta

Ingredients:
2/3 cup uncooked bulgur
2/3 cup boiling water
2 cups grape tomatoes, halved
1 (15-ounce) can garbanzo beans, drained
2/3 cup chopped seeded cucumber
1/2 cup chopped celery
1/3 cup chopped red onion
1/4 cup finely chopped fresh parsley
3 tablespoons fresh lemon juice
1 tablespoon extra-virgin olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup (1.3 ounces) crumbled feta cheese
Directions:
1. Combine bulgur and water in a large bowl. Cover and let stand 20 minutes or until bulgur is softened.
2. While bulgur stands, combine tomato and next 9 ingredients. Add to bulgur, stirring gently. Add cheese, and toss well.
