Serve Bulgur Salad with broiled lamb chops.
Ingredients:
1/2 cup boiling water
1/2 cup bulgur (cracked wheat), uncooked
1/2 cup chopped cucumber
1/4 cup chopped yellow squash
1/4 cup chopped sweet red pepper
2 tablespoons chopped purple onion
2 tablespoons chopped fresh parsley
2 tablespoons lemon juice
1 tablespoon water
2 teaspoons chopped fresh mint
1/2 teaspoon olive oil
1/4 teaspoon salt
2 teaspoons pine nuts, toasted
Directions:
1. Pour boiling water over bulgur; let stand 20 minutes or until liquid is absorbed. Stir in cucumber and next 9 ingredients; toss well. Cover and chill at least 1 hour. Sprinkle with pine nuts.
