From the Complete Idiot’s Guide to Glycemic Index Snacks Ingredients:
1 cup bulgur |
2 1/2 cups boiling water |
1 cup carrot, shredded |
1 cup fennel, thinly sliced |
1/2 cup kalamata olive, pitted |
1/2 cup pistachios, shelled |
1 cup feta cheese, crumbled |
2 tablespoons red wine vinegar |
1/4 cup olive oil |
1/2 cup fresh parsley, chopped |
1/4 cup fresh oregano, chopped |
Directions:
1. In a medium bowl, combine bulgur and boiling water. Let stand for 15 to 20 minutes or until bulgur is tender. Pour off any remaining water. 2. Add remaining ingredients and toss to combine. |
