Easy, make ahead breakfast for those on the go.
Ingredients:
1 1/4 cups date sugar
3/4 cup brown rice syrup
2 tbsp canola oil
1 1/4 cups prune puree
4 egg whites
1 tsp vanilla
3 cups oats
2 cups bran
1/4 cup flax seed, ground
2 cups flour
1 1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon, ground
1/2 cup raisins
Directions:
1. Preheat oven to 350 F.
2. Coat baking sheets with non stick cooking spray.
3. Combine sugar, syrup, oil, egg whites, vanilla and plums (or prune puree)in a bowl.
4. Add oats, bran, flour, flax seed, baking soda, baking powder and salt.
5. Stir in cinnamon and raisins.
6. Drop 1/2 cup at a time onto prepared baking sheets.
7. Bake for 20 minutes or until lightly golden.
