Simple. Ingredients:
1750 grams flour |
5 grams salt |
100 grams eggs, 2 large |
140 grams oil, canola |
1000 grams water |
Directions:
1. Put flour and salt in to bowl. 2. Whisk eggs. 3. Add eggs, oil and water to dry ingredients. 4. Mix either with a mixer or by hand for until smooth. 5. Set aside to rest for one hour. 6. Roll out to 1/8 -1/10 inch thick. 7. Cut in to 2 inch circles. 8. Add filling (walnut sized). 9. Fold edges together and seal. 10. Drop in to pot of boiling water. 11. When perogies float to the top, remove with slotted spoon and toss in melted butter. 12. At this point you may fry perogies until golden brown. 13. I put 8 per ziplock sandwich bags and freeze for future use. To use, thaw in fridge then toss in to pan to brown. Serve. |
