This recipe is from the Carmen Creek recipe card I picked up at the Wholefoods Market. I have not made these but have had buffalo at Wholefoods and it was very good and savory. Would be a nice appetizer to have at a party to offer guests something new to try. Ingredients:
2 lbs ground buffalo meat |
2 eggs, slightly beaten |
1 cup shredded mozzarella cheese or 1 cup gorgonzola |
1/2 cup dry breadcrumbs |
1/4 cup chopped onion |
2 tablespoons grated parmesan cheese |
1 tablespoon ketchup |
2 teaspoons worcestershire sauce |
1 teaspoon italian seasoning |
1 teaspoon dried basil |
1/2 teaspoon pepper |
Directions:
1. combine all ingredients. 2. shape into 1 inch balls. 3. place in single layer on a cookie sheet 4. bake at 350' for 10-15 min or till cooked through. 5. Drain and let stand. |
